Bold Barley Soup
This heartily delicious recipe is sure to make it into your list of winter favorite soups! It's easy and bursting with flavor.
Barley soup is a family favorite in my household, but each one of us has a special twist that we like to add to make our recipe our own. My father likes a tangy soup, while my mother likes a mild flavor, and I love a rich flavor.
For this recipe, I made good use of the produce in my fridge which added lots of bold flavors that complimented each other. Hope you like it!

INGREDIENTS:
- 1bag barley, rinsed
- 2 chopped stalks swiss char
- 2 peeled and diced carrots
- 1/2 diced bell pepper
- 1/2 diced onion
- 1/3 cup diced celery
- 3 minced garlic cloves
- 3 tbsp tomato paste
- 1/2 tbsp tumeric
- 1/3 tbsp cumin
- 1 tsp oregano
- 1/2 tsp black pepper
- 4 tbsp liquid aminos
- 2 dried bay leaves
- 3 cups vegetable broth
- 2 cups water
INSTRUCTIONS:
- In a pot, soften the carrots, bell pepper, onion, celery, and garlic in a few tablespoons of vegetable broth.
- Incorporate the tumeric, cumin, oregano, swiss char and tomato paste to the veggies and stir until combined.
- Add the barley, bay leaves, vegetable broth and water. Bring to a boil and simmer until the barley is tender (about 50 minutes)
- Before serving, stir in the liquid aminos (it's a delicious substitute for salt and it's nutritious for you!)
- Enjoy! You can top your soup with some creme fresh, sour cream, and parsley for even more flavor.
