Vegan Cherry Strudels
I know Lent is over and the last thing on anyone’s mind is anything vegan, but here is a great recipe for vegan cherry strudels, which you can add some dairy to if you want that extra touch. It’s only 5 ingredients and it’s super delicious! Here’s how to make it:
PREP TIME: 10min
BAKE TIME: 20min
TOTAL TIME: 30min
SERVES: 8 (1 per person)
INGREDIENTS:
- 1 package Pepperidge Farm Puff Pastry Sheets
- 1 can pitted cherries in cherry juice
- 1/4 cup confectioners sugar
- 2 tbsp milk (nut, coconut, or regular milk work)
- 8 tbsp cream cheese*****optional
INSTRUCTIONS:
- Preheat oven to 400 degrees and thaw puff pastry.
- Strain the juice from the can of cherries in a pot and bring the juice to a boil.
- Take the cherries and finely chop them.
- Add the cherries to the juice in the pot and let them simmer for about 5 min or until the filling thickens, then remove from the heat and set aside.
- Roll out the pastry sheets and cut out 4 squares from each sheet.
- Spoon one tablespoon of the cherry filling in the center of the pastry dough. ****This is where you would add the cream cheese, if you wanted to make this vegetarian.
- Use water to line the edges of dough.
- Fold the dough over and press the edges with a fork.
- Bake for 20min, or until the dough is golden.
- While the dough bakes, place the milk and sugar in a bowl and stir until thick.
- When the pastries come out of the oven, let them cool for a few minutes and drizzle the glaze over them.
- Enjoy with a hot cup of coffee or tea!
