Vegan Coffee Cake Muffins



When it comes to muffins, my all-time favorite flavor is coffee cake! That cinnamon sugar combination is unlike anything else. It’s basically an excuse to eat churros for breakfast. While this recipe is vegan, you can’t tell! They’re that delicious. I hope you give them a try and love them as much as I do!

BAKE TIME: 15 min
SERVES: 12 muffins

INGREDIENTS:
Muffin Mix

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1 1/2 tsp cinammon
  • 1/4 tsp baking soda
  • 3/4 cups milk
  • 1/3 cup oil
  • 1/2 cup applesauce
Crumb Topping
  • 2/3 cup granulated sugar
  • 1 tsp cinnamon
  • 1/2 cup margarine
  • 1 1/2 to 2 cups flour
Glaze
  • 1/4 cup confectioner's sugar
  • 1 tsp almond milk
INSTRUCTIONS:
  1. Preheat oven to 375 degrees Farenheit.
  2. In a bowl, mix the flour, sugar, baking powder, cinnamon, and baking soda.
  3. In another bowl, mix the milk, oil, and applesauce.
  4. Incorporate the dry ingredients in to the wet ingredients.
  5. Using a muffin tin lined with muffin cups, scoop in the mixture with an ice cream scooper.
  6. For the crumb topping, mix all the ingredients together. If the mix is pasty, add more flour until it crumbles.
  7. Cover the muffin tops with the crumble and bake for 15 minutes.
  8. While the muffins are in the oven, mix the confectioner's sugar with milk to make the glaze.
  9. After the muffins are baked, set them aside to cool. Then, using a spoon, lightly glaze the muffins.
