Swedish Meatballs





Swedish Meatballs (quick, easy & delicious!)

PREP TIME: None
COOK TIME: 20 minutes
SERVES: 4

Ingredients:
  • 16-20 Frozen Italian Meatballs (turkey, beef, chicken or soy are great choices. My favorite are the Frozen Italian Meatballs from Costco!)
  • 1 1/2 cups chicken broth (beef broth or vegetable broth work too)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 3/4 cup milk
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup chopped spinach *optional*
  • 1 tsp salt & pepper
  • 2 tbsp of olive oil
  • 1 package of Trader Joe's Penne Pasta (or just your favorite penne pasta!)
******For a yummy, easy twist, replace the milk, flour & butter with 1 can 
of cream of mushroom soup******

Instructions:
  1. In a pot, boil water with 2 tbsp of olive oil and cook pasta. Strain the pasta when finished cooking.
  2. Using a large pan, combine the chicken broth, garlic powder, dried oregano and milk. Add frozen meatballs to pan. Simmer meatballs in sauce for 12min or until the sauce begins to turn slightly golden. Stir occasionally.
  3. While the sauce is simmering, microwave butter until melted and whisk in flour. Add to the sauce when it starts turning a slight golden color. Using a whisk, incorporate the flour and butter combination. Continue stirring until there aren't any lumps. 
  4. Allow the meatballs and sauce to cook for about 5 min, until it thickens. Make sure to stir occasionally to avoid burning
  5. In the meantime, roll fresh spinach and chop. Fold it into to the mixture after it has finished cooking. The steam from the sauce and meatballs will cause the spinach to soften.
  6.  Mix the pasta with the sauce and meatballs. *Optional* (You can serve the finished product with some grated parmesan cheese or fresh parsley for an added twist).
  7. Enjoy!
