Savory Ragu (Vegan)


Something magical happens when you simmer tomatoes with wine and vegetables... In a healthy twist to classic ragu, I coupled pasta and tender veggies for a rich pasta that will leave you craving more.

Ingredients:

  • 1/2 package of penne pasta
  • 1 zucchini halved and sliced
  • 3 cloves garlic minced
  • 2 cups mushrooms sliced
  • 1/2 onion sliced
  • 1/2 bell pepper sliced
  • 1/2 cup olive oil
  • 1/2 cup dry wine (red or white)
  • 1 15oz can tomato sauce 
  • 1 tbsp dried oregano
  • 1/4 cup chopped parsley
  • 1/2 pkg. meatless meatballs (Trader Joe's)*** Optional***OR cooked, frozen beef meatballs
  • salt & pepper to taste
Instructions:
  1. In a pot, cook pasta with tbsp of olive oil and water.
  2. Using a pan, simmer the rest of the olive oil, zucchini, garlic, mushrooms, onion, bell pepper and meatless meatballs
  3. After the vegetables have softened (about 10 min), add wine, tomato sauce, parsley, and salt/pepper. Reduce for 10 min.
  4. After pasta is cooked, strain and add to sauce. Top with parsley and serve!
