Savory Ragu (Vegan)
Something magical happens when you simmer tomatoes with wine and vegetables... In a healthy twist to classic ragu, I coupled pasta and tender veggies for a rich pasta that will leave you craving more.
Ingredients:
- 1/2 package of penne pasta
- 1 zucchini halved and sliced
- 3 cloves garlic minced
- 2 cups mushrooms sliced
- 1/2 onion sliced
- 1/2 bell pepper sliced
- 1/2 cup olive oil
- 1/2 cup dry wine (red or white)
- 1 15oz can tomato sauce
- 1 tbsp dried oregano
- 1/4 cup chopped parsley
- 1/2 pkg. meatless meatballs (Trader Joe's)*** Optional***OR cooked, frozen beef meatballs
- salt & pepper to taste
Instructions:
- In a pot, cook pasta with tbsp of olive oil and water.
- Using a pan, simmer the rest of the olive oil, zucchini, garlic, mushrooms, onion, bell pepper and meatless meatballs
- After the vegetables have softened (about 10 min), add wine, tomato sauce, parsley, and salt/pepper. Reduce for 10 min.
- After pasta is cooked, strain and add to sauce. Top with parsley and serve!
