Mini Vegan Pizzas


There's something so therapeutic about that crispy crust that breaks apart when you take a bite, or the rich, steamy sauce that fills you with so much warmth. If I could have it my way, I'd probably eat pizza half the week... So seeing as I love pizza, I decided to test out a recipe for quick homemade pizza! When I say quick, I really mean quick. This recipe calls for literally 4 INGREDIENTS! And the bake time is 15 minutes. You're welcome. ;)

If you have picky eaters at home, the great thing about this recipe is that its VEGAN and it accommodates anyones preferences. You can add cheese, meats, more veggies, no veggies or whatever you like! So give it a shot and let me know how it turned out!

BAKE TIME: 15 min
TOTAL TIME: 20 min

INGREDIENTS:
  • 2 cups mushrooms, sliced
  • 2 cups frozen bell pepper strips
  • 2 cups marinara sauce (I love Trader Joe's Tomato Basil sauce)
  • 1 package puff pastry (Pepperidge Farm Puff Pastry Sheets)
INSTRUCTIONS:
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Thaw puff pastry sheets (*For quick thawing* Place frozen pastry in microwave in 10-15 sec increments until slightly malleable). 
  3. In a pan, place the frozen peppers and mushrooms and heat until thawed.
  4. Roll out each pastry sheet and cut 4 squares per sheet.
  5. Place each pastry square about 2 inches apart from each other on a baking sheet. 
  6. Using a knife, cut a 1 cm square edge in each pastry square.
  7. Spoon about 5 tbsp of marinara sauce inside the center of the pastry squares and spread within the cut edges.
  8. Top with mushrooms and bell peppers.
  9. Pop in the oven for 15 minutes or until the pastry has turned a golden brown color.
  10. *Optional* sprinkle ribbons of basil and oregano for an extra kick! Enjoy!
