Veggie Noodle Soup



A hot bowl of soup, some good books, a blanket, and rainy weather makes for the perfect cozy night in! My weekend was just that, with the addition of a cold. Thankfully, this tasty bowl of soup helped to lift my spirits and the cold! It's completely vegan and every bit delicious! Here's the recipe:

INGREDIENTS:

  • 1/2 cup of pasta
  • 3 cups vegetable broth
  • 2 cups water
  • 2 chopped carrots
  • 2 stalks chopped celery
  • 1/4 cup chopped onion
  • 1/4 cup frozen peas
  • 1/4 cup corn
  • 1/2 cup peeled & diced potatoes
  • 1 tbsp dried oregano
  • 1/3 tsp black pepper
  • 1 tbsp salt
INSTRUCTIONS:
  1. Slightly soften the carrots, celery, onion, and potatoes in some vegetable broth.
  2. Add the pasta, the rest of the vegetable broth, water, oregano, and salt/pepper to the pot and bring to a boil. 
  3. Cook until the pasta is nearly tender. Add the peas and corn to the soup and cook until the peas are thawed. 
  4. Enjoy with crackers!
