Veggie Noodle Soup
A hot bowl of soup, some good books, a blanket, and rainy weather makes for the perfect cozy night in! My weekend was just that, with the addition of a cold. Thankfully, this tasty bowl of soup helped to lift my spirits and the cold! It's completely vegan and every bit delicious! Here's the recipe:
INGREDIENTS:
- 1/2 cup of pasta
- 3 cups vegetable broth
- 2 cups water
- 2 chopped carrots
- 2 stalks chopped celery
- 1/4 cup chopped onion
- 1/4 cup frozen peas
- 1/4 cup corn
- 1/2 cup peeled & diced potatoes
- 1 tbsp dried oregano
- 1/3 tsp black pepper
- 1 tbsp salt
INSTRUCTIONS:
- Slightly soften the carrots, celery, onion, and potatoes in some vegetable broth.
- Add the pasta, the rest of the vegetable broth, water, oregano, and salt/pepper to the pot and bring to a boil.
- Cook until the pasta is nearly tender. Add the peas and corn to the soup and cook until the peas are thawed.
- Enjoy with crackers!
