Vegan Greek Salad



Salads can get a little bland, but adding adding the right ingredients can make them super tasty! Greek food is probably my favorite food, because it’s packed with flavor and wholesome ingredients. While this isn’t exactly a Greek Salad, it’s delicious and easy to prepare!

INGREDIENTS:

  • 3 cups spring salad mix
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1/2 tsp salt & pepper
  • 1/4 tsp dried oregano
  • 1 tomato, diced
  • 1 avocado, diced
  • 1 Persian cucumber, sliced
  • 1/4 cup kalamata olives
INSTRUCTIONS:
  1. In a small dish, mix the olive oil, vinegar, salt & pepper, and dried oregano.
  2. Add the rest of the ingredients in a bowl and pour the dressing over the top. Enjoy!
*** to make vegetarian: add feta cheese over top of the salad
