Vegan Cinnamon French Toast



It's hard to find a single person who DOESN'T love french toast. There's something extra special about sweet, fluffy bread. While there are lots of recipes for regular french toast, there aren't as many for vegan french toast, so I thought I'd give it a shot! Honestly, it's not as easy as I thought. There were several trials before I finally nailed the recipe, so I know for certain that it works! But all the work to make it is definitely worth it!

Plus, you can cater it to whatever flavors are your favorite, whether it be pumpkin spice, chocolate, orange zest, or some other combination!

Here's how to make it:

PREP TIME: None
COOK TIME: 10 minutes
SERVES: 4 (2 pieces per person)

INGREDIENTS:

  • 8 slices of bread (The thicker the cut, the fluffier the french toast. Also, denser, staler breads hold their shape better- like sourdough & french. I didn't have any at hand so I just used some regular loaf bread. Just know the toast won't be as fluffy.)
  • 2 cups almond milk
  • 1 tbsp ground cinnamon
  • 1 tbsp raw sugar
  • 4 tbsp butter alternative (I like "I can't believe it's not butter.")
  • 1/2 cup confectioner's sugar
INSTRUCTIONS:
  1. On low heat, add 1 tbsp of butter to your pan/grill and allow it to melt. Spread it across the pan to prevent sticking.
  2. Mix in the cinnamon and sugar with the almond milk.
  3. Place 1 slice of bread in the almond milk mixture and lightly coat (*KEY NOTE*: If you soak your bread, it will stick to your pan). Repeat with as many pieces of bread as can fit the pan/ grill.
  4. Place the slices of bread on the pan and cook until golden on both sides (about 4 minutes per side). *COOK ON LOW-MEDIUM HEAT.* Missing this step will cause your bread to burn.
  5. Repeat for all the slices of bread.
  6.  Cut each slice of bread diagonally and using a sifter, sprinkle on some confectioner's sugar!
  7. Serve with cream cheese, jam, maple syrup, glaze, chocolate sauce, or any of your favorite toppings...And of course, coffee!
